A housewife in Bangor named Maine was making a chocolate cake, and she forgot to add the baking powder into the cake. Her cake could not raise properly she cut it, served it in flat pieces, and liked by people who ate it. So Maine is the name mingled with the history of brownies very well.

So she also accidentally made brownies without adding baking powder. However, the most evidential source that chef at Palmer House Hotel in Chicago created a delicious treat for the World Columbian Exposition in 1893.

If we want to know the history of Brownies, Palmer Cox is a nig name we should know. Palmer House Hotel is considered the first place where chocolate brownies were made and served. Mr Potter Palmer was the owner of Palmer House Hotel, and the name of his wife was Bertha Palmer. The wife of Palmer House Hotel owner Mr Potter Palmer was a famous Chicago socialite. She was also president of the women’s board of managers for Palmer House Hotel.

At the event of World Columbian Exposition in 1893, organizers of the World Columbian Exposition asked her to make a delicious dessert especially a portion of food that can quickly put into the lunch boxes at the women’s exhibition area.

Mrs Palmer went to her husband’s hotel and gave the task of making a dessert that can be devoured and that should be smaller than a typical cake’s layer that we could efficiently serve it in the lunch boxes’.

As a result, they invented a brownie, and that was the first time people ate chocolate brownies without knowing the name of brownie. This chocolate has a double amount of chocolate than regular brownie we eat today. They also added the walnuts and apricot glaze into the popular food item, which is still serving in the hotels to date.

However, evidence shows that the Palmer house does not call brownies. The name of the brownie came after 1893. The person who added the recipe for the brownies in any cookbook was Fannie Farmer. 

But her cookie recipe is for baking in a rectangular pan, in the edition of The Boston Cooking-School Cookbook. Besides, that first recipe was without any chocolate. So, Fannie Farmer shared the recipe of Blondie instead of chocolate brownie. 

In the decade of 1890s, brownies appeared in two commercials. First, in the Sears and Roebuck Catalogue of 1897 and 2nd appeared in Kansas City Journal. The modern approach chocolate brownie recipe published in Home Cookery in 1904. The second was in the Service Club Cook Book in 1904, and the third one was in The Boston Globe in 1905, which is the earliest known published recipe. 

The Oxford Encyclopaedia of Food and Drink in America (2013) said they found evidence to support the Schrumpf’s opinion that the several cookbooks are including the recipe of Bangor Brownies in 1904.

In the second edition of her cookbook, Fannie Farmer published the combination of Blondie recipe and brownie recipe, called both brownies. After that, brownies became famous nationally and became one of the famous foods in the United States.
