Ever since moving to the UK, people have asked me what I miss about living in California.
3. The weather (duh!)
2. My family/ friends (of course!)
1. Good avocados. Can you believe that there are whole nations of people that don’t know what an avocado that has been ripened to perfection tastes like? Unbelievable.
But I’ve done my best, scouring the shops and the produce sections for maybe, just maybe one great avocado that could make me complete. Luckily I found 4 last weekend! I had just hit the avocado lottery!
Avocados are probably my favorite thing to eat. Sliced in a sandwich, diced in salads or spread on crackers, heck people even put the things in desserts nowadays! But my #1 way to enjoy the beautiful, tender green flesh of an avocado is in a Classic Guacamole. There’s nothing better than loading up a salty corn tortilla chip with a creamy, tangy guacamole! It’s the perfect dip for any occasion and who doesn’t like the dip that was sent from the gods? If you don’t you probably shouldn’t be reading this right now! But seriously, this guacamole is great. It lets you enjoy the flavor of the avocado, while you get a little zip from the lime and some heat from the jalepeno. Stop reading and go make some, now!
Ingredients
- 2-3 large, ripe avocados
- Juice of 1 lime
- 1 large tomato, cored and diced
- 1 clove of garlic, crushed
- Small handful of cilantro, chopped
- 1 small jalepeno pepper, seeds removed, chopped finely (optional)
- 1 tsp flaky sea salt
Instructions
- Cut open the avocados and scoop the flesh into a bowl. Mash slightly with a fork and add lime juice.
- Add the rest of the ingredients and mix until evenly distributed throughout the avocado.
- Keep covered in the fridge until ready to use.
