If you had to eat one thing for the rest of your life, what would it be?
Ah, the question that so many have asked, answered and debated. My response has always varied as I go through love affairs with different dishes or foods. Bread and mashed potatoes have always been quite high on my list of favorites, more recently anything from guacamole to seaweed salad have been the foods that I CANNOT live without. But one dish has always had my heart. From the neon boxed variety to the best baked Classic Macaroni & Cheese, I don’t discriminate. Any type of cheese, any kind of pasta, anytime. What do I wish I could eat for the rest of my life? Mac & cheese.
I was skeptical when using greek yogurt in my Mac & Cheese, but I had to try it. Greek yogurt is something that is usually reserved for my breakfast, but I thought the creaminess could work. The great thing about this recipe is that it’s easy and totally adaptable. Use whatever cheeses you have or like, purists might omit the spinach and diehard macaroni fans may change the pasta shape. That’s what I enjoy about cooking: it can be flexible to individual taste. Trying to be healthier? Lower the amount of cheese and use a stronger flavored cheese like Parmesan for more flavor. Add more vegetables! Greek yogurt has loads of protein so this really can be a quick, healthy dinner for the family. One recommendation however: make sure you season properly. Taste along the way to make sure there is enough salt, otherwise your Greek Yogurt Shells & Cheese will not be quite as satisfying.
Ingredients
- 8 ounces pasta shells
- 8 ounces shredded cheese (I used a mix of white cheddar and mozzarella)
- 1 cup plain greek yogurt
- 2-3 cups fresh spinach
- 1 large clove garlic, grated
- 1 tsp salt
- 1 tsp white pepper
- 1/4 tsp cayenne pepper
Instructions
- Cook the pasta according to the package's instructions. Reserve 1/2 cup of pasta water.
- Put the spinach leaves at the bottom of a colander. Pour the cooked pasta over the spinach to wilt. Return pasta and spinach to the pot.
- Add about half of the pasta water back into the pot with the cheese. Stir until melted.
- Add the remaining ingredients to the pot and mix until smooth and creamy, pouring in additional pasta water if necessary.
- Serve immediately.
