Ingredients

Here is what you need for mac and cheese on the grill:

  1. 8-ounce elbow macaroni
  2. Kosher or sea salt
  3. Vegetable oil, 1 teaspoon
  4. Red onion, medium size, quartered
  5. Husked corn, 1 ear
  6. Unsalted butter, 5 tablespoons
  7. Black pepper, freshly ground
  8. Poblano chilies, 2
  9. Red and Yellow bell pepper, 1 each
  10. Smoked bacon strips, quarter-inch crosswise cut, 2
  11. Minced shallot, 1
  12. Flour, 3 tablespoons
  13. Milk, 2 cups
  14. Grated smoked or pepper jack cheese, 8 ounces
  15. Mustard paste, 1 tablespoon
  16. Homemade breadcrumbs, dried, half cup

  16. Top bread crumbs to the mixture and adds in the remaining butter.
