  1. 2 Boneless, Skinless Chicken Breasts,
  2. 1/2 teaspoon salt,
  3. 1/4 teaspoon black pepper,
  4. 1 tablespoon olive oil,
  5. 3 tablespoons Tuscan herb dressing,
  6. 1 roasted red pepper (sliced),
  7. 2 slices fresh mozzarella cheese(sliced),
  8. 4 Slices of bread.


  1. Preheat oven to 400 degrees F. Wash and pat dry the chicken breasts and season with salt and pepper on both sides of the breasts.
  2. Heat a non-stick skillet over medium heat and add olive oil. Add the seasoned chicken, cover with Tuscan herb dressing, roasted red peppers, and mozzarella cheese—Cook for about 4 minutes or until browned on one side.
  3. Flip carefully with a turner so as not to tear up cheese slices if using fresh mozzarella, then add Tuscan herb dressing, roasted red peppers, and mozzarella cheese to the top of the Tuscan chicken sandwich.
  4. Cook an additional 4 minutes before removing from the pan to cool slightly before transferring to the baking dish(you want them to be together, so Tuscan chicken sandwiches are easier to flip).
  5. Transfer Tuscan chicken sandwich to baking dish, tucking Tuscan chicken sandwich tucks in a Tuscan herb dressing, roasted red peppers, and cheese slices if using fresh mozzarella into the Tuscan chicken.
  6. Bake 10-12 minutes until cooked through(165 degrees F internal temperature on an instant-read thermometer).
  7. Remove from oven and let rest 1-2 minutes before cutting each Tuscan chicken sandwich in half diagonally to yield 2 servings of Tucson chicken sandwich. Serve immediately.
