- 4 ounces cream cheese,
- 1/2 cup butter,
- 1/2 cup flour,
- salt to taste,
- white pepper ,
- black pepper to taste,
- 8 ounces sharp cheddar cheese Shredded,
- 4 oz Parmesan Cheese Grated Freshly,
- 1 lb pasta elbows.
- Preheat oven to 350 degrees. Heat a large pot of water until boiling over high heat. Add the pasta and cook until al dente (7-10 minutes, depending on the thickness of pasta).
- Melt butter in a medium saucepan over medium heat; remove from stovetop. Add flour and constantly whisk for 1 minute; return pan to medium heat and cook for 6 more minutes (roux should turn golden brown).
- Add salt, pepper, greek yogurt, cream cheese slice by slice while continuously whisking. Continue stirring until all ingredients are well combined and smooth in texture, about 3-5 minutes after adding cream cheese slices.
- Set aside off of burner but keep warm. Drain pasta in a colander when al dente, but do not rinse. Add cooked pasta to cheese sauce and stir until completely coated in sauce.
- Add shredded cheddar (reserve 1/2 cup for topping), Parmesan (reserve 2 tablespoons for topping), and half of the chopped green onions. Stir again until combined.
- Pour mixture into lightly greased or sprayed baking dish (9×13-inch is ideal). Top with reserved cheeses and onions, spreading evenly over top of macaroni mixture.
- Bake at 350°F 20 minutes or until bubbling around the pan and inside center is hot; cool 5 minutes before serving. Serve warm!
