Recipe Notes
  • You can make this mac and cheese recipe vegan or gluten-free by replacing regular pasta with a portion of gluten-free brown rice pasta or a vegan “mac” and cheese made from your favorite kind of dairy-free cheese.
  • To make this dish less calorie, you can use low-fat milk and light cream instead of heavy cream. Hellman’s has released a chipotle mayonnaise that would be delicious as well! Make sure to use chipotles in adobo sauce rather than chipotles in brine because the latter is not spicy.
