I love oats. When the temperature drops, nothing says ‘perfect breakfast’ like a bowl of warm, lightly sweetened oats. It is my perfect breakfast comfort food at this time of year. My normal go-to bowl is chock full of chopped apples and loads of cinnamon, but it is October after all, and what good is eating anything in October that doesn’t include pumpkin in it?
This oatmeal is great. All the flavors of a decadent pumpkin pie but in a more appropriate little breakfast package. Try to use pure maple syrup here: it’s less of a sweetener and more about that maple flavor. You don’t want it too sweet or you lose the earthiness of the pumpkin! You won’t believe how much it smells of pumpkin pie while simmering away on the stovetop. The autumn spices are filled with such nostalgia for me. With a big pot of tea or coffee, you’ll embrace the change in the weather happily, as long as you have this oatmeal.
