The sandwich gets its namesake from country singer Billie Holiday who started the trend in 1929 with a toast she made to “a handsome farmer” while at her sister’s home during one of her recording sessions. Ingredients
- 6 slices sourdough bread,
- 8 tbsps. unsalted butter, melted,
- 2 tsp. extra-virgin olive oil,
- 1/4 tsp onion powder,
- 1/4 tsp garlic powdered or minced small for better flavor,
- Salt and freshly ground black pepper to taste (about 1 teaspoon of each),
- 1 Roasted Chicken Breast sliced thinly,
- 2 tablespoons chicken stock,
- 2 teaspoons lemon juice,
- 1/2 teaspoon onion powder,
- 7 ounces arugula, sliced into thin strips,
- 3-4 slices bacon, cooked,
- Crumbled Italian parsley flakes.
Instructions
- In a large skillet on medium heat, add the chicken breast, onion powder, and garlic. Use tongs to flip breasts several times until they are cooked through and no longer pink in the center.
- Drain off excess grease (about 1/3), then season with salt pepper. Set aside while you prepare your other ingredients.
- Heat olive oil in a skillet on medium for about one minute and then add roughly chopped red bell peppers (I use the stem end as this is where there are fewer seeds).
- Cook until bright green set aside. Melt butter in another heated pan while frequently stirring over low to medium heat until slightly browned but not burned.
- Add sliced arugula and sautee strait five minutes or so, adding several tbsps of stock into the center after about 2 minutes to wilt the leaves and soften slightly. Transfer mixture into a baking pan or bowl until your bread slices are done from step two.
- Once completed, tear off cheese tops of sourdough stale, then cut each slice in half widthwise. Next, lay one piece down on a plate lined with several paper towels to absorb any extra moisture for later use.
- Repeat this process till you’ve used all four pieces (make sure your slices are evenly distributed with each one.
- Then part of your chicken breast, arugula, and peppers will be laid on top (Take the smaller end piece of bread), then some parsley flakes and cheese.
- Slide the second slice under the first ends to form a nice sandwich, lay bacon crumbles down last, so they stay moist, stack it back in place cut meal if gently squeezing can clamp this together before serving!
