- 3/4 teaspoon dried marjoram leaves and ,
- 1/2 teaspoon oregano leaves ground together in the perforated jar of a blender with salt,
- pepper to taste,
- 8 boneless skinless chicken breast, cut into slices,
- 2 cups grated mozzarella or provolone cheese, divided use,
- 1 teaspoon salt, divided use.
A few torn chunks of roasted red peppers according to taste (optional)
Instructions
- Preheat oven to 500 degrees.
- Place bread on a sheet pan and slather the inside of each piece with about 1/4 cup each of margarine and ketchup as needed, plus more for spreading if desired.
- Bake until golden brown, 7-8 minutes. Reduce heat slightly if starting to burn before turning over pieces of bread; cook an additional 3-5 minutes (watch closely).
- Remove from oven and set aside completely. Wrap each piece of white meat with a few chicken by placing it in the center on the top slice.
- Sprinkle knife-side down with 1/4 teaspoon salt and wrapped mozzarella Cheese slices over cheese side; Drizzle enough ketchup so that nicely moistened.
- Add shredded lettuce as desired to the sandwich without pooling spinach, tomato, or other sauce (optional). Serve immediately.
- Open face can be used to reheat (after foil or plastic wrap has been used to keep warm) on the open stovetop, microwave, or in a pan over medium heat for about 2-3 minutes.
